Quinoa
Cultivated for thousands of years in South America, Quinoa is not part of the grasses but is rather considered a pseudo-cereal. Quinoa is rich in vegetable protein, fiber, essential amino acids (which cannot be produced by the body), iron and manganese. Quinoa is eaten both hot and cold, salty but also sweet. It has the particularity of not containing gluten. Despite its particular taste, plant-based Quinoa milk has a great smoothness that is well suited to sweet recipes.
