Use
Green lentils can be eaten as soon as the germ appears and up to 2 or 3 cm, or even at the stage of young shoots (10 cm), raw or cooked (5 minutes with gentle steam).
Sprouted lentils are eaten mashed, in a fresh and crunchy salad with a drizzle of vinaigrette, or in minestrone.
