Plant food gelling agent, agar-agar has the power to absorb a large amount of water.

Depending on the degree of concentration in your preparations, it can form a thickening (soups, sauces ...), a light frost (jelly and mashed fruit, pastries ...) or a very firm gel (sorbets, asps ... ) that you can then mix to obtain a foam.

Indication

  • Harvested in France.
  • Made from Atlantic algae.

Use

For example you can use agar agar powder as gelling plant to prepare jams, your blanks or your asps.

Use

  • Pour the powder into the cold liquid e boil 3 minutes (the gel is formed by cooling).
  • Count 2g (1 teaspoon) into 1/2 liter of liquid to obtain a gel tender enough.
  • Increase the quantity if the preparation is acidic and jams.
