Garam Masala is an Indian blend of seven spices: coriander, cumin, cardamom, cinnamon, black pepper, cloves and nutmeg. It is added at the end of cooking in meat and vegetable dishes, but a pinch of this mixture can also work wonders on vegetable soup.
Potato & Cauliflower Curry - Aloo Gobi Ingredients for 6 people :
- 4 potatoes
- 1 cauliflower
- 1 large onion
- 3 tbsp. tablespoon of Terra Madre Madras curry
- 1 C. Garam Masala Terra Madre
- olive oil
- chopped fresh cilantro
In a sauté pan, brown the spices in the oil, brown the chopped onion. Add the potatoes and cauliflower cut into pieces. Cook over low heat for 20 minutes until the vegetables are tender. Present with the chopped fresh cilantro on top.
